Instructions
Step 1
Brown the sausage, breaking it apart as it cooks.
Step 2
Sauté the scallions
Step 3
Add garlic, sauté until fragrant. Add sausage back into the pot.
Step 4
Stir in the stock and cauliflower, season with salt and pepper and simmer until cauliflower is tender.
Step 5
Add kale and yogurt.
Step 6
Bring to a simmer. (Not a boil).
Step 7
Top with Parmesan cheese when serving.
