Ingredients
2 servings

400gtinned white beans
such as cannellini or butter, drained and rinsed

2 Tbsppumpkin seeds toasted

1red chilli
sliced
Peanut Sauce

2 Tbsppeanut butter

½ Tbsprice vinegar

1 Tbspsoy sauce

½ Tbsphoney

½ tspginger grated

0.5garlic clove
minced

1 Tbspwater
or coconut milk, as necessary for desired consistency

½ Tbspsriracha

Instructions
Beans
Step 1
Preheat oven to 180 degrees C.
Step 2
In a small bowl mix together the sauce ingredients until combined.
Step 3
Add beans to the sauce and mix to coat.
Step 4
Lay out on a baking tray ensuring beans remain as a single layer. Bake in the oven for 10-12 mins or until beans have become crispy.
Dip
Step 5
Meanwhile, make the dip by blitzing all the ingredients in a food processor until a smooth puree is formed.
To Serve
Step 6
Divide dip between shallow bowls. Pile the baked beans on top of the dip in each bowl.
Step 7
Scatter over the toasted pumpkin seeds and chilli, if desired.
