Hoisin Sweet Potato and Mushroom Bowl

Prep
Step 1
Thinly slice scallions , separate whites and greens.
Step 2
Dice sweet potato into very small pieces
Step 3
Trim and quarter mushrooms
Step 4
Dice bell pepper into small pieces
Cook Rice
Step 5
Melt 1 tbsp butter . Add scallion whites and 1 tbsp sliced ginger cooking until fragrant

Stir in rice , 2x water and pinch of salt .cook Rice covered for 15-18 mins
Roast veggies
Step 7
Heat oven to 425 F ,toss sweet potato ,mushrooms ,half hoisin sauce ,salt and pepper

Toss bell pepper on empty side with oil ,salt and pepper

Roast for 15 mins
Make Sriracha soy mayo
Step 10
Combine mayo , sour cream ,soy sauce and as much Sriracha . Whisk them to a smooth paste
Finish veggies
Step 11
Once veggies are roasted ,using a spatula ,toss sweet potato and mushrooms with remaining hoisin and half the sesame seeds

Return to oven and roast for 5-8 minutes more until glaze is tacky
Finish and serve

Fluff rice with salt
Step 14
Divide rice between bowls . Top with sweet Potato,mushrooms and bell pepper. Drizzle with as much as Sriracha soy mayo as you like .

Garnish with scallion greens and remaining seeds
