Veganuary day 11: Lemon Tofu.
This really is such a light and refreshing way to eat tofu but also feels properly naughty too.

2 servings

300gfirm tofu
block

½ tspsalt

½ cupcornflour
cornstarch, plus a bit extra to make a slurry, by mixing with water
Sauce

½ cupvegan chicken stock
or veg stock

1lemon
zest and juice

1clove garlic
grated

1 tspGinger
Grated

2 Tbsplight soy sauce

2 Tbspbrown sugar

2 Tbspagave syrup
or maple

2spring onions
sliced

½ tspchilli flakes
To serve
Instructions
Step 1
cut your tofu into triangles and season with salt before coating in cornflour
Step 2
air fry or pan fry for around 15 minutes or until nice and crispy
Step 3
for the sauce, to vegan chicken stock, add lemon zest and juice, grated ginger and garlic, soy sauce, brown sugar and syrup
Step 4
fry some chilli flakes and spring onion in a pan then add the sauce
Step 5
make a cornflour slurry with cornflour and water and add until the sauce is thickened

add your tofu back in and serve with rice, sesame seeds and spring onion greens
