Step 1
In a big bowl, place chicken thighs in and pour boiling water over chicken skin, this is to puff up the skin, which helps to keep the skin stay undamaged later in the cooking process, so it makes the overall presentation look better.
Step 2
Remove chicken thighs from the boiling water and season it with Cantonese spice mix -盐焗鸡粉(you may buy this spice pack from Asian grocery store or online), turmeric powder, peanut oil and cooking wine. Mix well with your hands and sit for one hour.
Step 3
Place a bunch of ginger and scallion slices inside a rice cooker pot, add already marinated chicken thighs on top of scallion and ginger (including the marinate sauce). Cook it like you normally make rice with rice cooker, which should take around 30-40 minutes.
Step 4
Remove chicken thighs from rice cooker once fully cooked (the room should smell really good with chicken aroma) and slice into small pieces, serve immediately with remaining sauce form the pot.
