Instructions
Step 1
Pound chicken breasts to 1/2 - 3/4 inch thickness.
Step 2
Sprinkle chicken with salt and pepper.
Step 3
In a large skillet, heat oil over medium-high heat.
Step 4
Brown chicken on one side.
Step 5
Turn chicken; add tomato and salad dressing to skillet. Cook, covered, 6- 8 minutes or until a thermometer inserted in the chicken reads 165°.
Step 6
Place cheese on top of each chicken breast.
Step 7
Cover and let cheese melt.
Step 8
Note: Serve over rice.
