Instructions
Step 1
In a large bowl, mix together the flour, oats, baking powder, salt, cinnamon, and chia seeds.

In a blender, combine the drained tofu, almond milk, maple syrup, and vanilla extract. Blend until smooth.

Pour the tofu mixture into the dry ingredients and mix until just combined. Stir in the melted coconut oil.

Let the batter rest for 5-10 minutes to allow the chia seeds and oats to absorb some of the liquid.

Preheat your waffle iron. Once hot, pour the batter into the waffle iron and cook according to the manufacturer's instructions until golden brown and crispy.

Serve the waffles warm with your favorite toppings, such as fresh berries, sliced bananas, a drizzle of maple syrup, or a dollop of vegan coconut whipped cream.
