Chicken Parmesan

2 tablespoonsolive oil

1clove garlic
minced

1 cupdry bread crumbs

⅔ cupgrated parmesan cheese

1 teaspoondried basil leaves

¼ teaspoonground black pepper

6skinless boneless chicken breast halves
Mashed Potatoes

2 poundsbaking potatoes
peeled and quartered

3 clovesgarlic

Step 1
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Step 2
Bring a large pot of salted water to a boil.
Prepare the Chicken Parmesan
Step 3
In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper.
Step 4
Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
Step 5
Prepare the asparagus and toss in olive oil, salt, pepper, and parmesan cheese. Lay out on a sheet pan on aluminum foil. Bake in the oven with the chicken for 20-30 minutes.
Step 6
Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
Prepare the Mashed Potatoes
Step 7
When the water is boiling, add potatoes and garlic, lower heat to medium, and simmer until potatoes are tender, 15 to 20 minutes
Step 8
Drain potatoes and return to the pot. Slowly add warm milk mixture, blending it in with a potato masher or electric mixer until potatoes are smooth and creamy. Season with salt and pepper.
Step 9
Serve with a salad.
