Mutton Kadai/Mutton Karahi (pan fried mutton with tomatoes )

Stir fried/pan fried mutton with tomatoes, it’s juicy and spicy but you can adjust the hotness according to your taste

Instructions

Step 1
For boiled tomatoes, cut 1 kg tomatoes into halves, place in the pot with skim side up, cook covered on low flame without water until tender and moisture dries out, now remove the skin

Chicken Kadai

Step 2
1- if your pot is non stick pour the oil and add mutton, if you’re using a stainless steel pot then heat the pot, pour oil and heat again and then add mutton to avoid the meat sticking to the pot

Add ginger garlic paste and stir

Add salt

Add red chili powder

Mix well, cook covered on low flame until moisture released from the meat dries out ( about 10 minutes)
Step 7
Before adding water fry the meat well until it releases aroma and oil separates This will neutralize the hotness of the red chili

Add water, cover and cook on low flame until meat gets tender and water dries out, stirring occasionally to avoid sticking to the pan (30 minutes)
Step 9
Add boiled tomatoes, stir and cover to cook for a while on medium to high flame until dries out
Step 10
Add butter, fry well until oil separates and your kitchen fills with aroma
Step 11
Sprinkle Garam Masala powder, 1/2 of the chopped coriander leaves, 1/2 of the ginger julienne and green chile, cover and simmer for about 3 minutes

Serving Suggestion

Serve hot with Naan or boiled rice
