If you have never made a mug cake, get ready for a simple and delicious, perfectly portioned single-serve treat. Mug cakes are made with a short list of ingredients and then cooked in the microwave for less than 5 minutes. Simple to prep with endless variations, this recipe uses nutrient-rich cherries and oat flour with a handful of pantry staples so you can enjoy a healthy sweet treat while losing weight on the DASH diet.

Instructions

Step 1
Lightly coat a 10-ounce or larger mug or ramekin with cooking spray.
Step 2
In a small bowl, whisk together the flour, stevia, baking powder, and salt (see Tip). In a separate bowl, whisk together the coconut oil, yogurt, milk, egg white(s), and vanilla. Fold in the cherries. Gradually mix in the dry ingredients until just incorporated.
Step 3
Pour the batter into the prepared mug or ramekin and microwave for 3½ minutes, then check to see if it’s set. If needed, add an additional 30 seconds. (Note that because microwaves vary in their power level, always start with the minimum time, then check and continue cooking if necessary.)
Step 4
Immediately run a knife around the edges to help separate the cake from the mug. Firmly place a plate over the mug, flip the mug over, and gently shake the mug to release the cake onto the plate.
Step 5
Let cool for 5 minutes.
Step 6
TIP: You can make this into a confetti vanilla cupcake by adding 1 to 2 teaspoons sprinkles when you mix the dry ingredients.
