Step 1
Pre heat oven to 170 degrees (cooking the chicken at a lower heat makes it much
softer)
Step 2
Cut the chicken into cubes, about 3 cm thick, and place on tin foil in an oven proof tray.
Step 3
Cover the chicken in the spices and olive oil and make sure the seasoning is spread over the chicken well.

Place tin foil over the top and ensure the edges are sealed.
Step 5
Cook in the oven for 30/40 minutes and check at 20 minutes.
Step 6
While the chicken is cooking, add the brown rice to a pot of boiling water (add some Himalayan pink salt for taste) and simmer for 15-20 minutes.
Step 7
Also bring the broccoli to the hob in boiling water and cook for around 5 minutes
