Instructions

Step 1
We peel the eggplant in thin lines, meaning that we do not have to completely get rid of the peels. Then we cut it into circles, soak it in water containing salt or vinegar, or both, and then fry it.
Step 2
As much as we can put the butter and oil, then add the grated onions and Minced garlic to them. After the onions are fried, we add the meat, then the spices, tomato paste, and chickpeas. Mix and add the grated tomatoes. After the mixture boils a little, and this is so that the chickpeas absorb the mixture, we add the boiling water.
Step 3
After the sauce is ready, we throw the fried eggplant until it absorbs the sauce and serve the dish on a serving plate And garnish it with chopped parsley.
