Instructions
Step 1
Remove the papery membrane on the back of the ribs, using a paper towel or kitchen towel to grip and pull it away in one piece. Cut the ribs into approx 4" pieces
Step 2
Preheat oven to 350°F (175°C). Season ribs all over with salt and pepper. Heat oil in a large skillet oven over medium-high heat until shimmering. Working in batches, add ribs and brown on all sides, about 4 minutes per side. Transfer browned ribs to a platter and repeat with remaining ribs.
Step 3
In a large bowl, combine the onion, ketchup, water, vinegar, brown sugar, Worcester sauce, and salt, then mix.
Step 4
Place ribs in a lipped baking pan, cover evenly with 3/4 of sauce. Create a cornstarch slurry with 1/8 cup of water and cornstarch, then mix into remaining sauce. Cover the baking pan with foil, and place in oven for 2 hours
Step 5
Uncover the ribs and add remaining sauce, cook for an additional 15 minutes
