musubi bowls have and will always be a comfort meal of mine~ i always have luncheon meat in my pantry for times of crisis (when i’m lazy and hungry). usually, the sauce for musubi calls for mirin but I find substituting it with water works fine too! i also like to finish my musubi bowls off with a drizzle of sesame oil and extra spicy seasoning!

Step 1
In a skillet over medium heat (no oil needed), stir-fry the diced luncheon meat until all sides are nicely browned and slightly crisp.

Add 2 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant.

Pour in the soy sauce, brown sugar, and water (use 1/2 to 1 tbsp water). Cook over medium heat, stirring occasionally, until the sauce thickens and caramelizes. This sauce will caramelize quickly so keep an eye on it!

Serve over a bed of rice, topped with eggs, shredded seaweed, sesame seeds and green onions.
