Instructions

Step 1
Bring a pot of salted water to the boil with a lid on
Step 2
Heat oil in a pan on medium heat. Add seeds and toast for 2 - 3 mins, stir often until golden. Remove from heat. Add soy sauce and stir quickly until coated. Set aside to cool.
Step 3
Cook noodles and edamame in the pot of boiling water. Drain and rinse with warm water. Return to pot with sesame oil.
Step 4
Heat oil in a pan on medium to high heat. Cook mushrooms and salt for 5 mins. Toss occasionally until golden and tender. Add to noodle pot.
Step 5
Stir fry broccoli and garlic with salt for 4 minutes until tender and charred. Add bok choy and cook for 3 minutes until wilted. Remove from heat and add all ingredients together with roasted sesame dressing and toss together. Season to taste with soy sauce.
Step 6
Top with seeds and roasted sesame dressing.
