Instructions

Step 1
Whirl egg and egg white in a blender with a little pinch of salt until well combined. Pour in olive oil in a trickle with the motor running until sauce begins to thicken. Turn off blender and add 3-4 tablespoons of lemon juice. Start blender again and continue to add olive oil until it is all incorporated and sauce is very thick. Set aside. Put minced garlic, mixed with 1/2 tsp salt through the garlic press into a small bowl, and using a rubber spatula, fold it into the aioli, incorporating well. Taste and add additional salt and lemon juice as needed. Refrigerate immediately after making.
