Step 1
Sprinkle feta on a dry pan and cook on medium heat until it starts to get a bit melted then push down the tortilla on top to make sure the cheese sticks to it ( I use protein tortillas so use that if you can find it or else any tortilla is ok) flip and the feta is nice and golden and crunchy then let the underside of the tortilla cook and get nice and crispy

In another pan lightly sprayed with oil add the egg seasoning with salt and pepper and add chili flakes if you like some heat then a hack I like to use to cook the top without adding extra oil is I add a splash of water in the pan cover it for about 20 seconds and let the steam cook the yolk until it’s just perfect

Put the tortilla on a plate then add yogurt on one half with pepper and coriander and cherry tomatoes and on the other side add the mixed salad egg and sriracha then fold over and enjoy the crunch
