Instructions

Step 1
Chop onions, peppers and tomatoes and fry in oil until soft.
Step 2
Add spices at the end and mix thoroughly
Step 3
Mix the eggs in a bowl and add the fried vegetables and mix well
Step 4
Pour the mixture in to the frying pan and cook on low-medium heat
Step 5
Flip over once there is no liquid on top of the egg, add cheese and cook for 1 minute
Step 6
Serve with spinach and arugula
