Step 1
Preheat oven to 425°. Like a large baking sheet with parchment paper.
Step 2
Slice chicken, peppers, and onion; add to a large bowl. Drizzle olive oil over top, sprinkle seasonings, and add minced garlic. Mix until seasoning and oil are evenly coating everything.
Step 3
Pour contents from the bowl onto the parchment-lined baking sheet and spread into an even layer. Add to oven and back for 15-20 minutes or until chicken is cooked.
Assembly
Step 4
Warm tortillas in the microwave and top with sour cream and salsa. Add the chicken and veggies and sprinkle cheese on top.
