Step 1
Add egg salt and oil to a measuring cup then mix and fill to the top with warm water then mix again

Add flour( 3 cups and one tbsp ) then mix to a dough and knead for a few minutes until the dough is supple . Cover with plastic wrap and let it rest 30 minutes

In a large bowl mix meat ( I use a beef pork mix ) diced onion salt and pepper to taste

Roll out the dough cut into circles then add about a teaspoon of the mixture into the center . Don’t over fill or it won’t close . Pinch closed in the middle then pinch the sides closed and fold both sides around to make the shape
Step 5
Cook the dumplings in batches in boiling water until they float on the surface . If you like fry them in a little butter to make the outside golden and slightly crispy . I like to serve with creme fraiche sour cream black pepper and spring onions
