Instructions

To prepare the kibbeh dough:

Step 1
Peel the pumpkin, then removed the seeds and chop it into large pieces.
Step 2
In a saucepan, put enough water and boil the pumpkin until it's soft. Drain the pumpkin chunks in a colander and set aside to cool.
Step 3
In a large bowl, mix the pumpkin, bulgur, salt, paprika and flour well and rub the ingredients to get a paste. Cover the bowl with a damp towel and leave it aside for some time

To prepare the filling:

In a saucepan, heat the olive oil and fry the onions for 5 minutes.
Step 5
Add the chard, green thyme, purslane and chickpeas.
Step 6
Season with salt and sumac, then pour in the lemon juice and stir the ingredients.
Step 7
Leave the filling on the stove for about 10 minutes, then set it aside until it cool completely.

The method of work:

Step 8
Divide the dough into medium-sized balls, then wet your hands with water and make a hole in the center of each ball.
Step 9
Fill all the balls with a tablespoon of the filling, then close them again.
Step 10
Heat the vegetable oil and fry the kibbeh until brown.
Step 11
Serve the Kibbeh pumpkin hot.
