Add rice to casserole dish, then add chicken broth. Cut up chicken breast into bite size chunks and cover with taco seasoning. Add chicken chunks to broth /rice mixture and make sure chicken is submerged and rice is covered. Add salsa, cover with foil and back at 375 degrees for 45 min. Add 1/4 cup or more of Mexican queso blanco and mix in. Add 2 cups of Mexican shredded cheese on top. Return to oven uncovered for 10 min. Till cheese is melted.
