Step 1
Slice the zucchini in half then use a spoon to carefully scoop out the flesh . Brush them with olive oil add salt and pepper and bake at 200 c fan setting 400 f for 12 minutes
Step 2
Remove the moisture from the zucchini flesh with paper towels then cut it up into small pieces
Step 3
Add a little olive oil to a pan then Fry diced shallots on medium heat for two minutes . Add the cumin seeds and garlic fry another minute then add the zucchini flesh and tomatoes and season with salt and pepper . Sautee two minutes then remove from the heat and add half of the cheese and chopped coriander and mix together

Step 4
Remove the zucchini from the oven and fill them with the filling then top with a little more cheese and bake another ten minutes or until the cheese has melted
