Step 1
Preheat Oven to 425 F
Step 2
Cut the zucchini in half lengthwise. Scoop out the seeds and discard them. Scoop out the soft center to create zucchini boats. Set the center pieces aside.
Step 3
Heat the olive oil in a skillet over medium-high heat. Add sausage, onion, and bell pepper. Saute together until the onions are transparent and the sausage is brown (Approximately 5-8 minutes).
Step 4
Stir in the salt, pepper, and red pepper flakes. Add in the garlic and tomato paste and cook 1 additional minute, until the tomato paste is incorporated.
Step 5
Chop up the zucchini centers and add to the meat. Cook for another minute.
Step 6
With a spoon, add the sausage and vegetables to the zucchini boats. Cook in the oven at 425 F for 15 minutes.
Step 7
Add some parmesan cheese on top and enjoy!
