Mixed Greens with Marinated Lentils & Sliced Apple
A mix and adaptation of EatingWell's similarly named recipe and Gimme Some Ovens Shallot Vinaigrette. Store lentils separately for meal prep. Recommend serving lentils warmed.

For the vinaigrette
Instructions
Step 1
Mix and whisk all the dressing ingredients
Step 2
Drain and rinse lentils. Put in meal prep container, and add half the vinaigrette.
Step 3
To serve, place lentils on a bed of mixed greens, added chopped apple, and dollops of the goat cheese. Add more dressing if needed.
