Step 1
Cook chicken and corn in Crock pot with sofrito for 4 hours
Step 2
Add just enough enchilada sauce to cover bottom of baking dish
Step 3
Roll chicken and corn in tortillas and add to baking dish
Step 4
Cover with enchilada sauce and Shredded cheese
Step 5
Bake at 375⁰ for 10-15 minutes
Step 6
Serve with sour cream and Cilantro
