Step 1
Tip the coconut milk into a large saucepan. Fill the tin back up with water and tip in

Add the curry paste, stock, soy and fish sauce and bring to a simmer

Prep the vegetables
Step 4
Once the flavours have come together mix before adding the noodles, veg and prawns. If you prefer the veg less crunchy add in for a few minutes before the noodles and prawns
Step 5
Cover with a lid and let simmer for approximately 4-5 minutes or until everything is cooked
Step 6
Serve. Leftovers will keep for about 2 days in an airtight container
