Instructions

Step 1
In a bowl, beat the eggs with the milk, salt, and pepper.

Heat the butter in a non-stick frying pan over medium heat.

Add the chopped onion and garlic to the pan and sauté until soft and translucent.

Add the chickpeas, harissa paste, and ground cumin to the pan, cooking for another minute. Adjust the amount of harissa paste based on your preference for spice.

Pour the egg mixture into the pan, spreading it evenly over the chickpea mixture.

Sprinkle the crumbled feta cheese and chopped cilantro on top.
Step 7
Cook the omelette until the eggs are set, then carefully fold it in half.
