Instructions

Step 1
For the scramble, line a plate with paper towels. Cook bacon, if using, in a skillet over medium-high heat until the fat renders. Transfer bacon to the plate to drain. Return the skillet to medium heat and add butter, if using instead of bacon.
Step 2
Add eggs to the hot pan and scramble, stirring continuously for 30 seconds to a minute, until eggs are cooked but soft. Remove eggs from the heat.
Step 3
For the cheese sauce, combine butter, mascarpone, and Parmesan cheese in a microwaveable bowl and cook on high for 30 seconds. you can also cook these ingredients in a small pot over medium-low heat until cheese has melted and sauce is creamy. Season to taste with salt and pepper.
Step 4
Scoop the scrambled eggs into a bowl, pour the cheese sauce over-top, and gently fold the cheese sauce into the eggs. Sprinkle with bacon bits, if using, and shredded cheese. Serve hot.
