Instructions

Step 1
Pound thai chillies and palm sugar into a paste in a mortar and pestle.

Add fish sauce, lime juice, shallots, dried shrimp, cilantro and combine.

Mix with green mango, and let sit while you cook the fish (or you can do this afterwards if you like a fresher taste).

Season with salt and steam the white fish until cooked, about 10 minutes.

Place the fish in a kitchen towel and ring out all the excess moisture.

Pound the fish in a mortar and pestle until fine and fluffy.

Heat your frying oil to 400 F and add the pounded fish.

Use a spatula to bring the flakes together and fold it over.

Once crispy and set, about 1-2 minutes, remove and drain on paper towel.

Season the fish with salt while still hot.

Add the roasted peanuts to the green mango salad and serve.
