Go to any fresh foods market to pick up your Red Snapper, I went to H-Mart. The Red Snapper costed closed to 50 for two nice cut whole pieces.

I started by cleaning the fish with water and lemon.

You can use a deep fryer depending how big the cutlets are. I cooked this dish for my mother and used a basic, stainless steel frying pan that she already had.

Grab a big enough bowl for your flour and pre season it with just salt and pepper.

Grab your Snapper and cut three slits on each side, (not too deep) then you’ll create a dry rub with dried onions, sazon, and dried cilantro.

Next rub the fish with the dry seasonings. Open the fish and rub the seasoning on the inside for enhanced flavor.

Take your fish let it sit for 5- 10 minutes and then cover the entire fish with the seasoned flour.
Step 9
Pour the oil into the frying pan (3 cups depending on how deep your frying pan is) and turn your heat up. To make sure the oil is ready, an old school method is to take your wooden spoon and place the tip into the oil, if it bubbles, it’s hot and ready!
Step 10
Place your fish into the oil, (carefully) as let it sit for 5 minutes, take a metal soup ladle and (carefully) pour the hot grease over the snapper. Flip the fish (carefully) and repeat.
Step 11
The at this moment the fish is finished. Top the fish with fresh squeezed lemon and a sprinkle of Old Bay. This type of fish is often paired with fried rice and fried plantains ❤️
