Zucchini salad
If you have a zucchini in your fridge right now go make this salad and thank me later it is that good!! I love this salad so much it’s so simple to make yet full of flavor, it’s healthy, hearty, filling and so delicious.

2zucchini
round cut

½ cuptomatoes
cut in half

0.5red onion
sliced thin

½ cupchickpeas
drained

2 tablespoonsolive oil

½ teaspoongarlic powder

½ teaspoonchili flakes

½ teaspoonlemon pepper

½ teaspoonsalt

parsley
for garnish
Dressing
Instructions
Step 1
1. Preheat the oven to 375° F, Cut the zucchini into rounds. Place in a bowl and season with olive oil, garlic powder, chili flakes, lemon pepper and salt.
Step 2
2. Toss well and transfer to a baking sheet lined with parchment paper. Bake for 30 minutes.
Step 3
3. Make the dressing by combining all the ingredients together.
Step 4
4. Assemble the salad- first the zucchini, then the sliced red onions, cherry tomatoes and chickpeas. Drizzle the dressing on top and garnish with some parsley and enjoy!
