Lemon Vinaigrette
Instructions
Step 1
Roughly chop peppers and onion and place on a baking tray together with chickpeas. Drizzle with olive oil and season with salt. Roast for 20-25 minutes at 220°C until slightly charred and crispy.
Step 2
In the meantime cook the quinoa and prepare the vinaigrette.
Step 3
Add all ingredients to a bowl and mix to combine. Enjoy!
