Instructions
Step 1
In a large skillet, sauté the onion until soft. Add the ground beef and brown (no need to drain the grease).
Step 2
Preheat your oven to 350° F and grease a 9x13 baking dish.
Step 3
Break up the chips a bit (while still in the bag). Place everything except for 2 large cups of reserved cheese into your baking dish.
Step 4
Use your hands to mix everything together until well combined. Make sure the mixture is evenly distributed on the bottom of the pan, and then top with the remaining cheese.
Step 5
Bake covered for 30 minutes. Uncover, and bake for an additional 10 minutes.
Step 6
Serve with sour cream, diced tomatoes, chopped lettuce, avocado, jalapeños, chives or anything else you'd like!
NOTES
Step 7
If it's easier, you can mix everything together in a separate large bowl before adding it to your baking dish. I just don't like the extra dirty dishes.
Step 8
Don't be afraid to customize this recipe to your own liking. You could use green enchilada sauce instead of red, or even add in some additional ingredients to the mixture such as black beans or corn.
