Step 1
Prepare all your vegetables (mis en place).
Add olive oil to heated pot. Add spiced meat and brown it. Then add the vegetables: onions, garlic, celery, celery root, parsnip, jalapenos, carrots, tomatoes, tomato paste, parsley, & cilantro. Let it cook down (appx 15-30 mins). Add water to fill. Add marrow bones(in mesh bag) and basil to pot. Let it cook down for (3-) 4 hours. After that, add the potatoes and chickpeas and let it cook down another half hour.
