As long as zucchini and tomatoes are in season you might as well make these delicious roll ups . Not only are these healthy and low carb but they make a delicious snack or even appetizer for groups

Step 1
Thinly slice the zucchini lengthwise with a knife or use a vegetable peeler . Add these to a lightly oiled griddle pan or frying pan and fry until they have lovely little char marks on them drain lightly with salt and pepper then remove and set aside to cool slightly
Step 2
Add the cream cheese , paprika onion powder garlic powder herbs and salt and pepper to taste then add chopped scallions and mix until smooth

paprika1 tsp
italian herbs1 tsp
onion powder¾ tsp
Step 3
Spread a layer of cream cheese on the zucchini then add a few thin slices of tomato and roll them up. You can use a cocktail stick to secure them if you like. These are best eaten straight away but can also be kept in the fridge for 3 days in a sealed container . Enjoy
