Ingredients

6chicken thighs
bone in
1 ½ cupswhite rice
1 ½ cupwater
0.5white onion
finely diced
Sesame seeds
toasted
fresh coriander
0.5red chili
thinly sliced
⅓ cupwhite miso paste
or 1/4 cup brown miso
3 Tbsphoney
2 Tbspsoy sauce
2 Tbspmirin
2 tspfresh ginger
minced
3garlic cloves
minced
1 tspchilli flakes
¼ tspwhite pepper
½ cupmayonnaise
1 Tbspsoy sauce
2 tspsesame oil
2 cupschicken stock
Instructions
Step 1
Pre heat oven to 200°c fan bake
Step 2
In a bowl, combine miso, honey, soy sauce, mirin, ginger, garlic, chilli flakes, and white pepper.
Step 3
Add chicken to marinade
Step 4
Wash rice and put into baking dish. Mix in stock, water, and onion.
Step 5
Gently place chicken on top of rice. Pour remaining marinade on top.
Step 6
Cover with 2 layers of tinfoil and bake for 45 minutes.
Step 7
Make sesame mayo. Combine mayonnaise, soy sauce and sesame oil.
Step 8
Take foil off chicken and bake for a further 25 minutes.
Step 9
Once chicken and rice are cooked. Pour over sesame mayo and garnish with toasted sesame seeds, coriander, and chili.
