Greek Quinoa Bowl

Instructions
Step 1
Cook quinoa (1 cup dry quinoa and 2 cups water or chicken broth. Add all to a pot and bring to a boil on high heat. Once boiling, turn heat to a simmer, add a lid, and cook until all liquid is absorbed about 10-15 minutes)
Step 2
For each serving, combine the day you eat. Combine shredded chicken, a scoop of hummus (as desired), cucumber, feta cheese, and a small amount of quinoa to a bowl. Mix and eat. Store each ingredient separately and combine in a personal bowl for each serving day
