Step 1
In a large skillet or wok, heat the olive oil over medium-high heat.

Add the minced garlic and cook for about 30 seconds until fragrant.

Add the sliced chicken breast to the skillet, season with salt and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the mixed vegetables and stir-fry for about 5-7 minutes until they are tender-crisp.

Return the cooked chicken to the skillet.

Add the low-sodium soy sauce and sesame oil, and stir to combine everything well. Cook for another 1-2 minutes to heat through.
