Ingredients
6 servings

4 cupsrice
cooked

⅓ cupketchup

3 tblsreduced-sodium soy sauce

2 tblsbrown sugar
packed

1 tblswhite vinegar

4 tspcornstarch

1 x 20 ozcan pineapple chunks in juice

1green bell pepper
med

2 clovesgarlic

12 ozchicken
cooked, cut in chunks, I just use the canned cooked chicken, and I use more than the recipe calls for
Instructions
Step 1
1) combine ketchup, soy sauce, brown sugar, vinegar, and cornstarch using whisk until blended.
Step 2
2) Drain pineapple reserving juice in small bowl. Measure 1/2 cup pineapple juice and add to ketchup mixture and set aside. (Discard remaining juice).
Step 3
3) Dice bell pepper - make sure seeds are removed.
Step 4
4) Heat oil in skillet over medium-high heat until hot. Add green pepper and garlic that has been pressed. Stirfry 1 minute. Reduce heat to medium. Stir ketchup mixture and add to skillet. Bring to boil. Cook and stir 1 minute until thickened. Add pineapple and chicken, toss to heat thoroughly. Serve over rice.
