Pumpkin-Spice Bars
“Moist bars with a not-too-sweet frosting.” Makes 48 bars.

4eggs
large

2 cupsgranulated sugar

1 cupvegetable oil

1can pumpkin

2 cupsall-purpose flour

2 tspsbaking powder

2 tspsground cinnamon

1 tspbaking soda

¾ tspsalt

½ tspground ginger

¼ tspground cloves

½ cupraisins

½ cupnuts
chopped, optional
CREAM CHEESE FROSTING:
Instructions
Step 1
Heat oven to 350 degrees Fahrenheit.

Step 2
Grease a 15 1/2x10 1/2x1” jelly roll pan.
Step 3
Beat eggs, sugar, oil and pumpkin.

Step 4
Mix in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves.

Step 5
Coat raisins with a little bit of flour to prevent them from sinking to the bottom. Fold into batter with a rubber spatula.

Step 6
Pour batter into greased jelly roll pan. Bake at 350 degrees Fahrenheit until light brown, about 25-30 minutes.

Step 7
Cool in pan.
Step 8
Frost with Cream Cheese Frosting. (Instructions follow.). Sprinkle with chopped nuts, if desired.
Step 9
Cut into bars, about 2x1 1/2”.

Step 10
Refrigerate any leftover bars.

CREAM CHEESE FROSTING:
Step 11
Mix cream cheese, margarine or butter and vanilla extract together.

Step 12
Gradually beat in powdered sugar until smooth and of spreading consistency.
