Ingredients

1cucumber
large, chopped
2spring onions
sliced
1ginger
thumb sized piece, sliced
1red chilli
sliced
3 clovesgarlic
sliced
1 tspsichuan pepper
For the sauce
Instructions
Step 1
Wash cucumber ( aim to get a less seeded cucumber if possible or else remove watery seeds ) then pat dry slice in half then quarters and slice roughly

Add all the ingredients for the sauce to a bowl and mix together . Adjust the tangy flavor to your liking to be set aside
low sodium light soy sauce1 ½ Tbsp
dark soy1 tsp
agave syrup1 tsp
sambal oelek1 tsp
Step 3
Add oil to a hot wok then add ginger garlic
Chili and spring onion and fry for about a minute but keep the ingredients moving the whole time so the garlic doesn’t burn
Step 4
Add in the cucumbers fry for about two minutes then add the sauce and let it bubble for another 30 seconds then toss through in the sauce . Serve immediately . I like to garnish with some sesame seeds coriander and chili oil
