Basic Stir Fried Beehoon

The most basic stir fried beehon eveerrr.. So versatile, you can add anything you want in the dish. From here, you can tweak the seasoning to get different flavor profile, i.e. substitute 50% light soy sauce with mushroom dark soy or even kecap manis (Indonesian thick sweet dark soy sauce). TIPS: To prevent the beehoon from sticking to the pan (unless you use teflon which I don't recommend), cook only until the liquid has been absorbed completely by the beehoon and switch off the fire. Beyond this, it will start to stick to the pan regardless the amount of oil you have in it.

Instructions

Soaking Beehoon

Step 1
Put the beehoon in a big enough container.
Step 2
Add room temperature water to cover the beehon.
Step 3
Let soak for 20 minutes and drain.
Step 4
Meanwhile prepare the veggies.

Dry Toast Bean Sprout

Step 5
To dry roast the bean sprout, heat up your frying pan until smoking.
Step 6
Add the bean sprout (make sure it's dry) to the pan and distribute evenly.
Step 7
Let cook on high heat until it's lightly charred.
Step 8
Stir and let cook again until tender. Set aside.

Cooking The Beehoon

Add the oil into a wok or frying pan.
Step 10
Add the shallot, and stir fry until browned.
Step 11
Add in the choy sum and garlic. Stir fry until the choy sum has wilted.

Combine water and all seasoning.
Step 13
Add into the pan.
Step 14
Immediately, add the beehoon into the pan.
Step 15
Cook until all liquid and seasoning are absorbed by the beehoon.
Step 16
Here is the magic trick for non-stick beehoon. Once all liquid is absorbed by the beehoon, immediately switch off the fire.
Step 17
Add toasted bean sprout and scallion into the pan. Mix evenly.
Step 18
Serve with deep fried shallot.
