Spongecake
Lemon Icing
Instructions
Step 1
Cut spongecake into desired sizes, then freeze for a couple of hours to make the spongecake less delicate, which makes the coating process easier.
Step 2
For the Coating, Mix the Lemon Curd, water and Icing sugar until smooth.
Step 3
Dip 1 side of the spongecake into the lemon icing then place that side onto a fork and spoon the icing over the remaining sides. Let the extra drip of for a little bit then roll in the coconut. Put lamingtons into fridge for a couple of hours to set.
