Sweet & Sour Meatloaf

Not like Sweet & Sour chicken-just the perfect amount of sweet & tangy. Literally the only meatloaf my husband will eat.

Instructions

Step 1
Preheat oven to 400°
Step 2
Mix the first 4 ingredients to make the sauce mixture (Mixing the brown sugar with vinegar FIRST helps to keep lumps from forming).
Step 3
In a separate bowl miss all other ingredients from the meat mixture (Including 1/2 cup of the sauce mixture)
Step 4
Shape into an oval loaf in a large baking dish
Step 5
Optional but recommended: Poke holes (I use a straw) all around loaf for the space to go into
Step 6
Pour remaining sauce over the meatloaf
Step 7
Bake in 400° oven for 45 minutes, basting with sauce occasionally
Step 8
Optional: Switch to broiler and put it in for another 5 minutes to get a crunchy top
Step 9
Note: Skim fat from juices in pan then pour the extra sauce over meatloaf
