One Skillet Creamy Gnocchi with Sausage and Spinach

1 lbitalian sausage

1onion
small, chopped

2cloves garlic
minced

1 teaspoondried parsley

½ teaspoondried oregano

¼ teaspooncrushed rosemary

¼ teaspoondried thyme leaves

¼ teaspoondried marjoram

¼ teaspooncrushed red pepper

2 tablespoonsbutter

2 tablespoonsvegetable oil

1 lbfresh gnocchi

⅔ cupsundried tomatoes
drained

⅔ cupchicken broth

1 ½ cupsheavy cream

3 cupsbaby spinach

½ cupparmesan cheese
fresh grated

salt
to taste

Instructions
Step 1
In a large skillet over medium heat, brown the sausage. When halfway browned, add the onion; cook until soft. Reduce heat to low. Add garlic, parsley, oregano, rosemary, thyme, marjoram, and crushed red pepper. Cook for 1 minute, stirring constantly. Remove from the skillet and plate. Drain excess grease and wipe out the skillet.
Step 2
Melt butter and heat oil in the same skillet over medium heat. Add gnocchi and sundried tomatoes, cooking until gnocchi is lightly browned; stir several times.
Step 3
Add chicken broth and heavy cream, simmering until slightly thickened; 5-6 minutes. Add spinach and cook until wilted. Reduce heat and add Parmesan cheese, stirring gently until melted.
Step 4
Add the cooked sausage mixture back to the skillet and heat through. Season with salt and pepper to taste.
