Instructions
Step 1
1. Place pork tenderloin in baking dish (fat side up) and sprinkle with salt and pepper
Step 2
2. Brown tenderloin at 500° for 30 mins
Step 3
3. Combine apricot jam, rice vinegar, balsamic vinegar and water in a sauce pan over low heat
Step 4
4. Pull tenderloin out of oven & pour apricot sauce over pork. Reduce oven to 325° and place back in oven for 1 1/2 hours (depending on your oven, I usually put it back in for only 45 mins or else it burns for me)
