Don’t throw out that stale old bread and make something tasty and amazing instead. This idea works with pretty much any bread and you can really add or take away any of the ingredients and make it your own but either way it’s a great way to reduce waste and make something tasty

Slice your stale bread then add butter Italian herbs and garlic on each one and a nice thick slice of mozzarella . ( reserve 50 grams of mozzarella for the top ) Pack these into a loaf tin until they reach the end .

Step 2
Half the tomatoes and push them in between the slices with olives and most of the torn basil . Add the remaining mozzarella on top season with salt and pepper and add a good drizzle of olive oil. Bake at 200 c fan / 400 f for 20 minutes or until golden and crispy . Enjoy
