Jalapeño Cheese Focaccia

The only thing better than homemade focaccia, is homemade focaccia topped with spicy jalapeños and lots of cheese! Dare I say it?! This is my favourite way to top focaccia.

Ingredients

1batch of focaccia dough
overnight focaccia recipe is on my profile and the Lace Bakes community
extra virgin olive oil
to drizzle
pickled jalapeños
can also use fresh
100gcheese
cheddar or red leicester, cubed
100gcheese
Cheddar, or Red Leicester, shredded
flaky sea salt
Instructions
Step 1
Remove your focaccia dough from fridge and let proof in tray, covered, at room temperature for about 2 hours.
Step 2
Preheat oven to 220C/430F.

Step 3
Cube half of your cheese and shred the rest. I used Red Leicester cheese here in the UK, but would use cheddar back at home in the US. I just love the orange colour of the cheese and cheddar is white in the the UK! Use as little or as much cheese as you'd like...the quantities stated are just a guide.
Step 4
Drizzle fully proofed dough with a bit of extra virgin olive oil and dimple your dough.
Step 5
Push as many pickled jalapeños as you’d like into some the dimples in the dough.
Step 6
Push cubes of cheese into some dimples in the dough.
Step 7
Sprinkle focaccia dough with a little bit of flaky sea salt.
Step 8
Bake as directed in focaccia recipe for about 15 minutes and then quickly remove from oven (you don’t want to disrupt the baking too much), sprinkle with remaining shredded cheese and return to oven until the focaccia is finished baking.
Step 9
Let cool and enjoy!
