Ingredients

2 Tbsolive oil
1.5 kBeef Blade Roast
1red onion
large, cut into thin wedges
2garlic cloves
sliced
3 cmginger
piece, peeled, cut into matchsticks
1cinnamon stick
or quill
4lime leaves
massaman curry paste
750mlsalt-reduced beef stock
6potatoes
medium, Creme Gold
280ggreen beans
trimmed
400mlcoconut cream
roasted peanuts chopped
jasmine rice
steamed, to serve
Instructions
Step 1
1. Preheat oven to 16O'C. Heat the oil in a large casserole pan over medium-high heat. Pat the beef dry with paper towel and season. Add beef to the pan and cook, turning, for 3-4 mins each side or until browned all over. Transfer to a plate.
Cast Iron Pot
Step 2
2. Return pan to medium heat. Add the onion and cook, stirring, for 1 min or until onion softens. Add garlic, ginger and cinnamon and cook for 1 min or until aromatic. ,Add 2 lime leaves and the curry paste. Cook, stirring, for 2 mins or until aromatic. Pour in the beef stock and stir to combine.
Step 3
3. Return the beef to the pan. Cover and bake, turning every 30 mins, for 2 hours or until the beef is tender.
Step 4
4. Add potatoes to the pan, Bake, covered, for 45 mins or until the potatoes are tender. Uncover and add the beans. Stir in the coconut cream. Bake for a further 5 mins or until the beans are tender.
Step 5
5. Thinly slice the remaining lime leaves, discarding the tough middle stems. Use a fork to roughly break up some potatoes into large chunks. Use 2 forks to coarsely shred the beef. Sprinkle the curry with the peanut and sliced lime leaf.
Step 6
Serve with rice.
